Dagwood Sliders
1# ground sirloin, formed into 24 patties
12 slices white cheddar cheese
2 ea shallots, peeled and sliced
1T canola oil
12 ea pickle slices
12 ea mini hamburger buns, 2” wide
Ketchup
Dijon mustard
TT salt and pepper
For each person you will need to make 6 mini hamburger patties slightly larger than your buns.

Heat the oil in a sauté pan over medium high heat.
2. Add in the sliced shallots and stir to coat with the oil.
3. Cook until caramelized. Set aside.
4. Toast the buns using a flattop or broiler, hold warm.
5. Season the patties well with salt and pepper on both sides.
6. Sear quickly on both sides in a very hot sauté pan.
7. When you remove the patties, immediately place the cheese on top so that it melts.
8. To assemble: Bottom bun, desired condiments, two patties, caramelized shallots, sliced pickle, top bun. Each person should get four sliders.
Serve with French fries.
