Estiatorio Ornos celebrates the marriage of Greek and Middle Eastern flavors and highlights the cooking preparations and use of spices from across the region. Guests will feel transported by the bright and airy aesthetic, the authentic and flavorful dishes, and the warm and relaxed style of hospitality. A house playlist beckons guests to sit and stay all evening, reveling in the array of sharable dishes, refreshing cocktails, intriguing wines, and a lively atmosphere.  

Led by award-winning Chef Michael Mina in partnership with Girair “Jerry” Goumroian, the 76-seat restaurant presents the evolution of the iconic 252 California Street flagship location, sharing the story of Mina’s childhood in Egypt and his travels through cuisine style, ingredients and flavors.

Michael Mina

Born in Cairo, Egypt and raised in Ellensburg, Washington, Chef Michael Mina began his epicurean journey at the Culinary Institute of America in Hyde Park, NY. During his formal schooling, he spent his weekends sharpening his skills with hands-on experience by working in Chef Charlie Palmer’s kitchen at the upscale Aureole in New York City. Early in his career, Chef Mina was presented with a rare and unique opportunity with Chef George Morrone when the duo were asked to develop a concept and create a menu for an upscale seafood restaurant in San Francisco – the city Chef Mina had always dreamed of calling home.

Unfazed by the major earthquake that rocked the Bay Area on his second day in the city, Chef Mina went immediately to work under Chef Morrone’s direction. In his role as chef de cuisine, he dedicated himself to perfecting the complete dining experience by personally training the entire kitchen staff and refining the menu. In 1991, Chefs Mina and Morrone opened AQUA to rave reviews and national acclaim. Chef Mina served as AQUA’s executive chef from 1993 to 2002, during which time he was awarded Rising Star Chef of the Year (1997) and Best Chef: California (2002) by the James Beard Foundation Awards.

Chef Mina’s culinary and business vision ultimately led to the founding of MINA Group, which now owns and operates more than 30 restaurants around the world.

Throughout his illustrious career, he has been honored with numerous accolades including a Michelin star at MICHAEL MINA (2012-2018), James Beard Foundation’s “Who’s Who of Food & Beverage” inductee (2013), Gayot’s Restaurateur of the Year (2011), Bon Appétit’s Chef of the Year (2005), and more.

Chef Mina and his collection of restaurants have been featured across national media outlets such as Bon Appétit, Food & Wine, Food Network, The Today Show, TIME, Robb Report, Travel + Leisure, and Wine Spectator. He has been a featured guest chef at the James Beard House on numerous occasions, has served as a judge on Hell’s Kitchen and Master Chef, and has cooked for three U.S. presidents: Bill Clinton, George W. Bush, and Barack Obama.

Daniela Vergara

Born and raised in Queens, New York, Chef Daniela Vergara set her sights on a career in the culinary field early on. Driven by her Colombian roots she has always dreamt of opening a Colombian restaurant in honor of her mother, who taught her how to cook from scratch and host large parties at her childhood home.

Pursuing her dreams, Vergara enrolled at The Culinary Institute of America (C.I.A.) in Hyde Park, N.Y. after high school. While obtaining a degree in Business Management with a minor in Farm to Table cuisine in 2016, Daniela’s passion for cooking was ignited after an internship at Tasting Table, the notable food news site. Daniela furthered her training at the C.I.A., during which time she completed an internship at Boca Raton Resort. Upon graduation, she accepted a MINA Fellowship where she rotated through MINA Group’s renowned San Francisco restaurants – RN74, PABU and MICHAEL MINA at the time – working both front and back of house positions until 2018.

In June of 2018, Daniela was promoted to Junior Sous Chef at Mina Test Kitchen, where she excelled in the position, and was then promoted within the company to Executive Sous Chef at the newly-opened Trailblazer Tavern in San Francisco’s burgeoning Transbay District. For almost three years Vergara served as an ambassador of the MINA brand. She attests her technical skills and knowledge of different cuisines like French, Hawaiian and Egyptian, to maintaining her career within MINA Group.

When the Coronavirus pandemic hit in 2020, Vergara remained employed at MINA Group and was part of the founding team of MINA Family Kitchen, a program helping feed the families of all furloughed staff members. Once established in the Bay Area, she traveled across the country to help mobilize programs in D.C., Las Vegas and Miami. As the food & beverage industry began opening up again, she was a key component in helping open Wit & Wisdom in Sonoma, California, reopen International Smoke San Francisco, and Bourbon Steak Nashville.
