Bourbon Pub is Chef Michael Mina’s lively take on the American pub, remixed for a new generation. This energetic twist on casual dining features a playful menu of comfort food as only Michael Mina can deliver. The menu is complemented by a robust list of frosty libations, ales, pilsners, stouts, and lagers from around the world, as well as house-made infusions, barrel-aged cocktails, and seasonal punches. Modern interpretations of all-American classics—burgers, fries, house-made pretzels, wings, and more— give you all the best of fine dining in a laid back atmosphere.

Chef Jon Blackley

About Our Chef: Jon Blackley

Jon Blackley is originally a North Carolina native.  Chef Jon had the great fortune to work in the best restaurants in the state and has been in the hospitality business for over twenty years.  Jon has held most positions in the kitchen starting at dish and rising to Executive Chef. He has also had his fair share of experience in the front of house as server, bartender, and floor manager.  Jon believes that dining is one of the last true remaining social interactions we still have in this day and age. His experience ranges from humble beginnings at local pizza pubs and elevating to the upper echelon of cuisine.  Jon’s most recent notable experience includes but not limited to Banquet Chef of the Unstead Hotel and Spa, Cary North Carolina (5 star, 5 Diamond), (3yrs) Chef De’ Cuisine of Prestonwood Country Club (sister property to the Umstead) 3.5yrs and most recently Executive Chef of Vidrio in Raleigh, North Carolina (a division of LM restaurant group).

Chef Jon’s style of cuisine plays on the familiar yet elevated.  He enjoys cooking with the seasons using as local and sustainable outlets as possible.  Jon finds having a relationship with local vendors and purveyors alike is critical to source the best products possible for the companies he works with.  Service and dining is a true passion of his and he continues to push his standards and those around him to deliver the highest level of hospitality possible.  All the while making sure that we have a positive outlook and teamwork. Jon believes that establishing a positive environment ultimately pays off for the dining experience.
