Mina’s Fish House

Inspired by the traditional fish houses of the Islands, MINA’s Fish House combines the flavors and ingredients of the Hawaii with the culinary expertise of Michelin-starred Chef Michael Mina in a beautiful open-air, oceanfront setting.  

MINA’s Fish House re-imagines Hawaiian fish house theme by combining the seafood bounty direct from pristinely clear waters of the Pacific. Dine on inventive, craveable seafood dishes, such as our signature Hawaiian seafood tower, Kona cold lobster and coconut bisque, or Hawaiian abalone spaghetti. Allow our signature fish sommeliers, Ryan Houser and Saui Matagiese, to guide you on your journey – you haven’t lived until you have experienced a fish paired perfectly with your palette by our expert duo who have, quite literally, spent their whole lives honing their craft just for you. Ryan and Saui work with local fishermen and connect guests with the daily catch and best menu options.

Aged with a warm patina throughout, the restaurant seamlessly connects the inside with the outside. We gracefully plateau from the interior bar and dining room space down multiple exterior decks, ending with beachside “feet in the sand” dining options to deliver the perfect epic aloha as only MINA can.

About Our Chef: Garrick Mendoza

Innovative cuisine and fine dining have always been a passion for newly installed MINA’s Fish House Executive Chef Garrick Mendoza. A graduate of the Culinary Institute of America, in Hyde Park, New York, Chef Mendoza’s first commitment is keeping flavors true for clarity in every dish.

It’s a philosophy that dovetails perfectly with that of Chef Michael Mina at MINA’s Fish House at Four Seasons Resort O`ahu at Ko Olina: food “as good as we can make it” in fresh, distinctive preparations that enhance the bounty of the sea.

Working side-by-side with the James Beard Award-winning Michael Mina in Hawaii is a dream come true for Mendoza and his team as they turn their talents to making MINA’s Fish House Oahu’s top culinary destination for fine beachside dining and unforgettable experiences.

After graduation from the Culinary Institute of America, Chef Mendoza achieved the role of sous chef at the acclaimed Del Posto, in Chelsea, New York; earning Relais & Chateaux distinction, a AAA 5 Diamond Award, and the Grand Award from Wine Spectator.

In 2011, with a growing family, he returned to Albuquerque to open Scalo and Elaine’s, two bold new offerings of French-inspired American cuisine, earning media rave reviews.

Presented with the opportunity to work with Chef Michael Mina in late 2017, the young chef did not hesitate to welcome the opportunity to bring his passion for the extraordinary to organic, memorable and unique seafood dishes on Oahu’s west side, using only the best local ingredients.

In his leisure time, Chef Garrick enjoys traveling around Oahu with his wife and two children, discovering new flavors and getting acquainted with the very rich Hawaiian culture and aloha way of life.
